Bittorrent openly display our IP addresses when we are connected to each other so they can easily track our IP address back to us. Does eMule in anyway "show" our IP addresses to the other users connected?

Yes! The IP's are shown in Verbose log in Servers-tab if verbose is enabled in Options/Extended.

Someone would have to be able to open the options, find the extended settings, enable the verbose log and most important, be able to read it. That requires to be able to use some text editor or file viewer.

So it is safe to say, emule is pretty safe against complete noobs.

^^ Not with the official client. :P

Edit: I assume you mean that the IP's are shown in known clients list.

Whether eMule is safe or not, depends on who you want hide from!
eMule v0.50a [NetF WARP v0.3a]
- Compiled for 32 and 64 bit Windows versions
- Optimized for fast (100Mbit/s) Internet connections
- Faster file completion via Dynamic Block Requests and dropping of stalling sources
- Faster searching via KAD with equal or reduced overhead
- Less GUI lockups through multi-threaded disk IO operations
- VIP "Payback" queue
- Fakealyzer (helps you chosing the right files)
- Quality Of Service to keep eMule from disturbing VoIP and other important applications (Vista/7/8 only!)

Well, how about rodents under my bed? Can eMule hide from them? Is it 'safe'?

I pity the rodent that occupies the same physical space as the 120mm steel case fans in my computer

sorry to create a fuss. but yes, some versions do show the ip's in known clients list. but as stated before, it's only as safe as what you have to hide. and i'm sure if somebody is looking for ip's, they will have a version that shows them.[not that i worry]

Ok guys, lets just say how safe emule (by itself) if you like downloading say a few songs there and there and the occasional porn movie. You don't download programs or anything. By safe I mean not being caught and sued by the owners of the copyright.

Well who 'bout that:
The probability to get caught should be:
Sum(PTGC of all files you share) / filecount
in average... and simply the highest PTGC of all files you share absolute (if there is one file with 100% then you WILL be caught)

Depending on the age of the files and the number of sources the probability to get caught varies from 0% to 100%. There is no other answer.
Download only legal files... or: learn to live and accept the risks of your deeds.
